Recipe: Protein Waffles with Peanut Butter, Strawberries, and Cacao Nibs

I mean just look at them - they're gooey yet crispy, sweet yet decadent, super flavorful for the tastebuds and also so packed with good-for-you nutrition.
When it comes to waffles, their nutrition content isn't always stellar. Sometimes they're made with refined white flour, a lot of added sugar, and then topped with more added sugar in the form of syrup or honey. Most times, waffles lack protein and they fall short on delivering healthy fats. That's just the usual nature of waffles!
But with a couple simple swaps, waffles are elevated to a more nutrient-dense breakfast (or breakfast-for-dinner) option. Here, I used a flapjack and waffle mix from Kodiak Cakes* made with simple ingredients like whole wheat flour, oat flour and whey protein. When making waffles with this mix, compared to traditional waffle mix, I'll get more fiber (5 grams per serving) and protein (14 grams per serving). That's a nutrition win!
Most times, I also like swapping out maple syrup, honey, or added sugars that would otherwise get added to waffles and replace with a more nutrient-dense alternative. Here, I used melted peanut butter. Melting a tablespoon or two of peanut butter in the microwave in short, quick bursts - then drizzling it over your waffle is simply delish AND nutrish.
Berries (shaped like hearts!) are added to this delicious waffle for some natural sweetness (plus fiber and phytonutrients!). Hemp hearts deliver extra protein, healthy fats, and fiber while the cacao nibs give the waffle extra crunch plus magnesium and theobromine too! Awesome!

Protein Waffles with Peanut Butter, Strawberries and Cacao Nibs
Ingredients:
- 1/2 cup Kodiak's Buttermilk Power Cakes Flapjack & Waffle Mix*
- 1/2 cup water
- 1 teaspoon oil
- 1-2 Tablespoons peanut butter, melted
- 4-5 strawberries, halved
- 1 Tablespoon hemp hearts
- 1 Tablespoon cacao nibs
Instructions:
- Mix the Kodiak Power Cakes Waffle Mix* with water and oil, according to package directions
- Add the wet waffle mixture to a preheated waffle iron and cook until lightly brown on the edges or the indicator light on the waffle iron shares doneness
- Remove waffle from the waffle iron. (1/2 cup of waffle mix makes two 6" waffles)
- Top one waffle with melted peanut butter, strawberries, hemp hearts and cacao nibs.
